Home made Protein Powder without sugar or jaggery

Ingredients
  

  • 1 cup almonds
  • ½ cup cashew nuts
  • ½ cup walnuts
  • ½ cup pistachios (pista)
  • ½ cup pumpkin seeds
  • ½ cup sunflower seeds
  • ¼ cup watermelon seeds
  • 2 tbsp chia seeds
  • 5-6 green cardamoms
  • ½ tsp turmeric
  • ½ cup dry milk powder optional
  • 1 cup dry dates
  • pinch saffron for color

Instructions
 

  • Dry roast 1 cup almonds, ½ cup each cashews, walnuts and pistachios until it turns aromatic. Transfer them onto a plate.
  • In the same pan, add ½ cup pumpkin seeds, ½ cup sunflower seeds and ¼ cup watermelon seeds.
  • Roast them on low flame until they turn crunchy and aromatic. Transfer them to the same plate with almonds.
  • Keep a few pistachios and chop them for garnishing and keep them aside.
  • In the same pan, add 2 tbsp chia seeds and 5 green cardamoms. Roast until chia seeds pop. Transfer to the plate.
  • Remove the seeds from the cardamom shell and keep aside.
  • Take 1 cup of dry dates, remove seeds and grind them to a fine powder. Keep aside.
  • Once the nuts cool down, transfer to a blender jar, add cardamom, dry dates powder, ½ tsp turmeric and milk powder. Blend to a fine powder. make sure to pulse and blend to prevent oil releasing.
  • Protein powder is ready to use. Store in an airtight container and use up to 2 months or refrigerate up to 6 months.

Protein Milk

  • To prepare the protein milk, heat 2 cup milk on medium flame.
  • Once the milk starts boiling, add 3 tbsp of prepared protein powder and mix well. Turn off the flame.
  • Let it cool a bit and serve. Garnish with chopped pistachios.

Notes

  1. Vegans may use vegan milk powder such as coconut milk powder.
  2. You may use your choice of nuts and dry fruits.
  3. Use peanuts for variation, but it may taste a little different.
  4. Nut-free: you may use hemp seeds for who has nut allergies.
  5. Add cocoa powder to make it chocolaty.
  6. You can change the proportions of the ingredients as you like.
