Roasted Cauliflower Grilled Cheese with Jalapeno Aioli Sandwich is the best tasting, easy to make and very filling sandwich. This crispy, creamy favorite has four servings of antioxidant-rich veggies. This sandwich is very addictive, yummy and gives satisfaction to your taste buds.
Cauliflower Sandwich is rich in bone building calcium and rich in protein.
This recipe calls for mayonnaise. If you don’t have or don’t want to use mayo, you can substitute mayo with greek yogurt (hung, thick yogurt, rich in protein).
We have to bake veggies in an oven. If you do not have oven, you can fry in a pan on stove top. Here I am showing the recipe using a pan.

How to make Cauliflower Sandwich

Ingredients
- Onion – 1 medium, sliced into 1/4-inch-thick rounds
- Olive oil – 4 tbsp
- Cauliflower – 1/2 sm head, sliced into flat, 3/8-inch-thick pieces
- Sea salt and fresh cracked black pepper
- whole-grain or favorite bread – 8 slices
- Aged cheddar or mozzarella cheese – shredded – 1 cup
- Baby arugula/spinach/kale – washed and dried – 1/2 cup
- Butter – 2 tbsp
Aioli
- Mayonnaise or greek yogurt – 4 tbsp
- Small Garlic clove, peeled, minced – 4
- Medium Jalapeno – 3/4 to 1 , minced (discard the seeds and ribs if you want less heat)
- Sea salt – 1/8 tsp
Instructions
- Slice onions into 1/4″-thick-rounds, and Cauliflower in to 3/8″-thick-flat pieces.
- Combine all the aioli ingredients in a bowl and mix well.
- Add onion and 1 and half tbsp oil to a saute pan and cook over medium-low heat, flip and cook after a few mins until the onion is caramelized or until onions turn to golden color. Sprinkle pepper lightly. Transfer them into a plate.
- In the same pan, gently toss cauliflower with remaining oil, sprinkle with salt and pepper, and roast 10 mins or until lightly browned. Flip and mix them, roast another 5 mins. (can use an oven or an air fyer for this step).
- Spread both or one slice of bread with aioli. Layer 1 slice with onions, cauliflower, shredded cheese and arugula or spinach leaves. Top with the other slice of bread.
- Add the butter to the pan used to caramelize the onion, heat over medium-low heat and place the sandwich (the bread closest to the cheese layer should be on the bottom) in the pan.
- Cook for 4 mins, or until the bottom is golden brown and cheese is melting, applying pressure to the top of the sandwich with a spatula.
- Flip and brown other side about 3 or 4 mins.
- Serve hot with chips.
Step by step photo instructions
- Keep all the ingredients ready. Slice onions into rounds, and Cauliflower in to thick, flat pieces.
2. Add onion and 1 and half tbsp oil to a saute pan and cook over medium-low heat, stirring frequently, until the onion is caramelized or until onions turn to golden color. Sprinkle pepper lightly. Transfer them into a plate.
3. In the same pan, gently toss cauliflower with remaining oil, sprinkle with salt and pepper, and roast 10 mins or until lightly browned. Cover the pan with lid to speedup the process. Flip them, roast another 5 mins. (can use an oven or an air fryer for this step).
4. While the veggies are frying, Combine all the aioli ingredients in a bowl and mix well. I used greek yogurt instead of mayonnaise.
5. Spread both or one slice of bread with aioli. Next start layering with caramelized onion, cauliflower.
6. Now sprinkle some shredded cheese and layer with spinach leaves. I am showing mozzarella cheese. Top with the other slice of bread and spread the butter on top.
7. Use the pan again that was used to caramelize the onion, heat over medium-low heat and place the sandwich (the bread closest to the cheese layer should be on the bottom) in a pan. Cook for 4 mins, or until the bottom is golden brown and cheese is melting, applying pressure to the top of the sandwich with a spatula. Flip and brown other side about 3 or 4 mins.
7. Serve hot with kettle cooked chips.
Tips
- To save time, You can use an oven or an air fryer to roast cauliflower instead of pan. That way while onions are frying, can roast the cauliflower at the same time.
- Onion and cauliflower both can be done in air fryer.
- Can use any leaves of your choice. eg., arugula with spinach or kale leaves.
- Use any cheese you like. It may taste a little different with each type. Personally I like cheddar and mozzarella.
- Can be used any type of bread.
- If you want more heat you can add jalapeno pepper slice while layering, after cauliflower.
- You can refrigerate left over onion, aioli and cauliflower to use next day.
