Sev poori

Sev puri is a popular chaat snack and street food from Mumbai and one of the favorite chaat at my home. We usually have this for lunch. Sev puri is spicy, sweet and tangy to taste with so many different textures and tastes mingling in your mouth. It is easy to assemble Sev puri.  Just that some of the ingredients need to be prepped up before you start assembling them. Sev Puri makes a great party starter. No wonder, everyone will love it this way and ask for seconds and thirds:). This is one of the most delicious snacks which can be enjoyed and loved by all age groups.

I used readymade store bought poori/papdi. You just have to boil potatoes and make fresh chat chutneys or you may use the store bought chutneys too.

Ingredients to make Sev Puri

  • Pooris or papdis – These are crisp flat fried pooris made from whole wheat flour. They can be made at home or bought from stores.
  • Green chutney  – Spicy green chutney made from fresh coriander leaves or both coriander and mint leaves and chillies.
  • Sweet chutney – Made from tamarind, dates, jaggery and spices.
  • Garlic Red chutney – spicy hot chutney made from dry red chilies or red chilli powder and garlic.
  • Sev – Made from crisp fried besan/gram flour . Can be again made at home or bought from stores.
  • Veggies  – Boiled and mash potatoes, chopped onions, cilantro and raw mango.

Its best to make the chutneys a day before and refrigerate them to speed up the process or to cut back on time. Pooris/papdis and sev can be store bought.

Step by step photo instructions

  1. First keep all the ingredients ready before assembling the sev puri.

2. Place 5 or 6 pooris in a plate, place mashed potato on the pooris.

3. Add a generous amount of sweet tamarind date chutney.

4. Next add green chutney. Adjust this spicy green chutney as per the spice level.

5. Now add a dash of garlic red chutney.

6. Place some onions on each poori.

7. Similarly, place raw mango pieces on top.

8. Now top the pooris with cilantro.

9. Finally sprinkle some sev on top.

10. Serve immediately as the sev becomes soft.

11. 2nd method to enjoy sev puri: You may find it silly, but we enjoy sev puri even this way.

  • Crumble/crunch the pooris into small pieces, add mashed potato, onion, raw mango, cilantro, chutneys and sev.
  • Mix everything well. Enjoy right away.
  • It is very filling this way.

How to make Sev Puri

Ingredients

  • poori/papdi
  • sev – 1 cup
  • Boiled potato – 3-4
  • onion – 1 md, finely chopped
  • raw mango – 1 md, finely chopped
  • cilantro – 1/2 bunch, finely chopped
  • sweet chutney
  • green chutney
  • garlic red chutney

Instructions

  1. First prepare mashed potato mixture by boiling the potatoes/aloo, then mash and mix with red chilli powder, salt, chat masala, coriander and cumin powder.
  2. Then chop onion, raw mango and cilantro.
  3. Place onion, cilantro, raw mango, sev, tamarind date chutney, green chutney, garlic chutney in separate small cups and snack poori in a plate, mashed potato in another bowl to assemble sev puri.
  4. Place 5 or 6 pooris in a plate and layer the pooris with mashed potato, 3 chutneys, onion, raw mango, cilantro and finally sev.
  5. Serve immediately.
  6. 2nd method to enjoy sev puri: You may find it silly, but we enjoy sev puri even this way.
    • Crumble/crunch the pooris into small pieces, add mashed potato, onion, raw mango, cilantro, chutneys and sev.
    • Mix everything well. Enjoy right away.
    • It is very filling this way.

Tips

  1. You can add chutneys after you layered everything on top.
  2. You can adjust the chutney quantities as you like.
  3. Raw mango gives very nice flavor, do not miss it.
