Hummus Sandwich | Mediterranean Veggie Sandwich

Mediterranean Veggie Sandwich recipe is a simple 10 minute sandwich that you can make at home! Packed with so much flavor! Layered with hummus, fresh veggies and feta! So easy, and satisfying!

If you’re a fan of Panera Bread’s Mediterranean Veggie Sandwich, then you will love this almost copycat recipe!

Anyway, speaking of sandwiches, Panera’s Mediterranean veggie sandwich is one of my favorite restaurant menu items. And now you can make this popular veggie sandwich at home!

For this Mediterranean sandwich recipe, fresh veggies are combined with sweet peppers, feta and creamy hummus.

This cold sandwich is not only quick and easy to make, you can easily turn this sandwich into vegan-friendly by skipping feta or use tofu feta instead and can be made gluten-free too simply by using gluten-free bread.

This homemade Mediterranean veggie sandwich recipe is sure to become your new favorite! because it became ours! I’m convinced it’s the perfect vegetarian sandwich.

Ingredients

  • Multi Grain or Whole Grain Bread: You may also use Artisan bread if you do not like multigrain. The Panera version of this sandwich comes on tomato basil bread. Unfortunately, unless you go to Panera, it’s difficult to find this type of bread on store shelves.
  • Hummus: I like to use roasted red pepper (store bought) hummus. For flavor change, feel free to use cilantro jalapeño hummus variety. You can use store bought or make your own using a food processor.
  • Spinach:  Panera calls their lettuce emerald greens. I like using spinach or arugula.
  • Sliced Tomato: You may use any tomato that’s in season.
  • Cucumber: Use regular seedless cucumbers for this recipe.
  • Peppers: Panera uses roasted red peppers but I just always go for any sweet bell pepper, red or yellow.
  • Feta: I prefer whole foods store feta cheese, block or crumbled. Tofu feta is something you’ll have to make at home. You can’t find it in grocery stores, but it’s super simple. It takes about 15 minutes. You can follow Basic Tofu Bhurji | Curry Tofu Scramble recipe for reference.
  • Red Onion: Thinly slice and layer just as much as you prefer, or leave off all together if you are not an onion lover!
  • Sun-dried Tomatoes: I use store bought jarred sun-dried tomatoes for extra flavor, You may leave off these if you don’t like them or if they are not available.

Ingredients
  

  • hummus roasted red pepper / plain / cilantro jalapeño
  • cucumber thinly sliced
  • tomato thinly sliced
  • bell peppers red or yellow
  • sun-dried tomato optional
  • red onion thinly sliced
  • spinach or arugula or lettuce
  • feta cheese crumbled form
  • salt & pepper
  • bread multi grain or artisan or tomato basil
  • jalapeño peppers optional, sliced

Instructions
 

  • Toast the bread to your liking or skip if you prefer the bread not toasted.
  • Apply hummus generously on one side of each bread.
  • Layer the remaining ingredients starting with the cucumber, followed by tomato slices, jalapeño peppers, red onion, roasted red peppers, and spinach. Sprinkle salt & peper and the feta crumbles.
  • Top with the other slice of bread.
  • Serve with chips or juice or salad or soup.

Notes

  1. You can skip adding sun-dried tomatoes.
  2. Vegans skip using feta, use tofu feta instead.
  3. For tofu feta, you may use the similar process of Basic Tofu Bhurji | Curry Tofu Scramble
  4. You can add jalapeño peppers for little heat.

  1. Toast the bread to your liking or skip if you prefer the bread not toasted.

2. Apply hummus generously on one side of each bread.
