Moong dal salad is popularly known as Kosambari. Kosambari is a really light, and refreshing salad and can be made on any occasion. This cooling salad is perfect snack for summer months.This is served as a side on Rama Navami festival along with panakam. You can serve it as a side dish with your regular meals as well. This healthy salad is very easy to make with all healthy ingredients. This is gluten free, vegan, nut-free and soy-free.

How to make Moong Dal Salad

Ingredients
- moong dal – 1/2 cup, soaked
- cucumber – 2 tbsp, chopped
- grated carrot – 2 tbsp
- fresh grated coconut – 2 tbsp
- pepper – pinch
- green chilli paste – 1/8 tsp / green chillies – 1, chopped
- cilantro
- salt
- lemon juice – 2 tsp
Instructions
- Rinse moong dal 2 to 3 times. Soak dal at least an hour. Drain water.
- Add cucumber, carrot, coconut, salt, green chili paste, cilantro, pepper and lemon juice. Mix well.
- Add seasoning by heating a tsp oil, add a little of mustard seeds, jeera, urad dal, few curry leaves. Serve chilled or at room temperature.

Tips
- You can adjust the ingredients according to your taste.
- Omit green chilli paste if don’t like spiciness.
- Can add pomegranate seeds.
