Ingredients
  

  • 2 cups pasta cooked
  • 1 cup bell peppers any color
  • 1 cup cherry tomatoes halved
  • 2 tsp vangeebath masala
  • 1 tsp salt to taste
  • 2 tsp lime juice optional
  • cilantro chopped to garnish
  • 2 tsp roasted sesame seeds for garnishing

Instructions
 

Cook The Pasta

  • Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.

Preparation

  • In a large skillet, heat the 2 tbsp olive oil over medium heat.
  • Add ½ tsp cumin seeds and allow them to sputter.
  • Firstly, add 1 cup bell peppers and saute on high for 2 minutes.
  • Now, add 1 cup halved cherry tomatoes(or 2 standard tomatoes) to the skillet and cook for 2-3 minutes until they start to soften.

  • Add the cooked pasta to the skillet, tossing to combine with the vegetables.
  • Add 2 teaspoons of lime juice, if desired.

Notes

  1. Feel free to add any other quick-cooking veggies you like or have on hand, such as bell peppers, zucchini, spinach, broccoli, asparagus or beans.
  2. If cherry tomatoes are unavailable, use standard tomatoes.
  3. Use more tomatoes for juicy pasta.
