Watermelon Cooler | Watermelon Cucumber Juice

This Watermelon Cooler is the ultimate summer thirst quencher! A cool and refreshing beverage that is done in a jiffy and requires 3 basic ingredients only. This juice has herby pep from mint – delicious on a hot day!

Who needs those fancy, designer drinks, when you can make this awesome drink at home with very less ingredients? Vegetarian, gluten-free, vegan, plant-based, dairy-free, refined sugar free, and naturally sweet.

You don’t need a juicer to make watermelon cucumber juice: just a simple blender and a fine mesh strainer!

This quick and easy watermelon cooler combines the tropical flavor of watermelons, the tanginess of lemon juice, and the cool, refreshing taste of cucumbers and punch from mint in one sip. Who wouldn’t want to cool down with a glassful of all this goodness?

You can opt to leave the cucumber peel, but you can also peel it. Leaving it on will give your cooler an earthier taste, plus it adds more color and texture while infusing more nutrients.

Watermelons are 92% water, So that means that you are giving your body what it needs on a hot day but in a more delicious way! How Long Does This Juice Last?

  • Like many of our homemade juices, this one lasts about 2 hours at room temperature. For this reason, we highly recommend drinking it soon after juicing.
  • Watermelon cucumber juice can last up to three days in the fridge and six months in the freezer.

Can You Freeze Watermelon Cucumber Juice?

  • Yes, you can freeze this drink if you want. If storing in the freezer, be sure to use a freezer-safe container like a freezer bag.
  • In both cases (refrigerator and freezer), the juice may separate or settle. Don’t worry, this is absolutely normal for fresh juices. The pulp with all the minerals and vitamins settles at the bottom of the container leaving water in the top half.
  • Give it a quick stir before serving, and it will be normal and delicious again!
  • You can freeze this drink or use an ice tray to make cubes if you want. We suggest putting it in a freezer-safe, airtight container to store safely.
  • To thaw, transfer the frozen juice into the fridge and let it defrost slowly overnight.

Equipment

  • 1 blender

Ingredients
  

  • 1 cup watermelon cubes
  • ½ cup cucumber slices peeled or unpeeled
  • 6 mint leaves for blending and garnishing
  • 2 tbsp honey optional
  • 1-2 tbsp lemon juice
  • few ice cubes optional

Instructions
 

  • Add all the ingredients and blend until smooth.
  • Strain the juice using a strainer. This is an optional step, it tastes good even with the pulp.
  • Serve with ice cubes, watermelon cubes, mint leaves and cucumber ribbons.

Notes

  1. No need of using honey if the watermelon is sweet enough.
  2. Vegans can substitute honey by agave nectar or sugar.
  3. You may add a little black salt. It goes well with this recipe.
  4. Staining the juice is optional.
  5. You may grind ice along with the watermelon or you can freeze watermelon cubes directly!

  1. Using a peeler, make cucumber ribbons.

2. Add 1 cup watermelon cubes, ½ cup cucumber slices, 4 mint leaves, 2 tbsp honey, and 1 tbsp lemon juice in a blender and blend until smooth.

3. Strain the juice using a strainer. This is an optional step, it tastes good even with the pulp.
