This easy no bake cheesecake recipe is layered with fresh strawberries, homemade whipped cream, and crushed graham crackers. This pretty looking strawberry cheesecake trifle is so simple to make and tastes incredibly rich. Strawberries are one of my favorite fruits.  I am very glad we have them available almost year round. I would eat this No Bake Strawberry Cheesecake Parfait for dessert all year long. This indeed can be a great dessert to enjoy at potlucks and/or picnics.

How to make Strawberry Cheesecake Parfaits

PREP TIME: 15 MINS  TOTAL TIME: 20 MINS  COURSE: DESSERTS/SWEETS  SERVINGS : 3

Ingredients

• strawberries – 1 lb
• confectioners’ sugar (powdered sugar) – 1.5 tbsp.
• cream cheese – 4 oz
• vanilla essence – 1/2 tsp
• fresh cream or heavy whipping cream – 1/2 cup
• sugar – apprx 1 tbsp
• melted butter – 2 tbsp
• graham crackers – 4 sheets

Step by step photo instructions

1. Remove and discard the stems from the strawberries, then cut the strawberries into bite-sized pieces. Place in a bowl with the powdered sugar. Stir well to combine, then let this sit for 15 minutes.

2. In the meantime, place the graham crackers into a zip lock bag and crush them with rolling pin until ground into fine crumbs. You can also use a food processor and pulse them till crumbs.

3. Combine the graham cracker crumbs and melted butter in a bowl, and stir until the crumbs are moistened. Set aside.

4. In a large bowl, whip together the cream cheese, sugar, vanilla essence and heavy whipping cream/fresh cream with a hand mixer, for about a minute on medium high speed, until the mixture is smooth and combined.

5. To assemble the cheesecake parfaits, place a layer of the buttery graham cracker crumbs at the bottom of a glass. Next add a layer of a few spoonful’s of the cream cheese mixture. Top that with a layer of the macerated strawberries, then repeat with one more of each layer. Sprinkle a dusting of graham crackers and place a strawberry on top to garnish.

6. Chill the parfaits in the refrigerator before serving, and enjoy!!

Tips

1. You can use rolling pin or a processor whichever is available to crumb graham crackers.
2. You may also use a little bit of lemon zest while macerating the strawberries.
