Prasadam Nuvvula Pulihora/Prasadam Puliodarai

Prasadam Nuvvula Pulihora – This sweet and tangy flavored South Indian style rice recipe made with cooked rice, tamarind extract, little jaggery and sesame seed powder. Roasted sesame seed powder adds more flavor and nutrition to this rice. This is generally served as naivedyam/prasadam in temples, but can also be served for lunch boxes and also for a meal. This is also called Puliodarai or Puliogare or Tamarind rice. This Tamarind rice is very easy to make, no experience needed.

You can make this paste ahead of time and keep refrigerated. Use it any time you need. It will be for few weeks.

How to make Prasadam Nuvvula Pulihora

Ingredients

rice – uncooked – 1/2 cupred chillies – 3
tamarind – 1/4 cupoil – 2tbsp
roasted sesame powder – 2 tbspcurry leaves – few
peanuts – 2 tbspseasoning ingredients
jaggery – 4 tsphing – pinch, salt – 1.5 tsp
green chillies – 4-6turmeric – 1 tsp, divided

Instructions

  1. Rinse and cook rice before hand. Spread it in a plate and cool it down.
  2. Rinse and soak tamarind in hot water. Squeeze it with your hand and make pulp.
  3. Heat a pan with oil, add chanadal, urad dal, mustard seeds, jeera and curry leaves.
  4. Add green chillies, red chillies and peanuts. Fry till peanuts crunchy.
  5. Add turmeric and hing.
  6. Add tamarind pulp and cook for 10 mins.
  7. When the tamarind pulp starts to thicken and oil floats on top, add jaggery and salt. Cook for 3 mins.
  8. Add roasted sesame powder and turn off the heat. The paste should be little thick.
  9. Take 1/2 tsp turmeric and 2-3 tsp oil in your hand, mix and add this to white rice, Mix well.
  10. Add pulihora paste to rice and mix well to coat the paste evenly to the rice.
  11. Serve as a meal or offer it to god as naivedyam/prasadam.

Tips

  1. You can refrigerate the leftover pulihora paste and you can use it as needed. It will stay fresh for weeks. Just make sure the salt is enough and use only spoon. Do not use bare hands in it.
  2. Adding turmeric and oil mix to the rice gives nice color to the rice. Do not skip this step.

Step by step photo instructions

3. Heat a pan with 2 tbsp oil, add 1 tsp chanadal, 1 tsp urad dal, 1/2 tsp mustard seeds, 1 tsp jeera and few curry leaves. Add 4 slit green chillies, 3 red chillies and 2 tbsp peanuts. Fry till peanuts crunchy.

4. Add 1/2 tsp turmeric and a pinch of hing.

5. Add 1 cup tamarind pulp and cook for 10 mins.

6. When the tamarind pulp starts to thicken and oil floats on top, add 4 tsp jaggery and 1.5 tsp salt. Cook for 3 mins.

7. Add 2 tbsp roasted sesame powder and turn off the heat. The paste should be little thick.

8. Take 1/2 tsp turmeric and 2-3 tsp oil in your hand, mix and add this to white rice, Mix well.

9. Add pulihora paste to rice and mix well to coat the paste evenly to the rice.

10. Serve as a meal or offer it to god as naivedyam/prasadam.
