Probiotic rice ~ also called Fermented rice and chaddannam or Chaldannam in Telugu region. This old, traditional and healthy morning breakfast recipe has been enjoyed for generations.
The recipe is a staple of South Indian cuisine. Rice can become a probiotic through a simple and natural fermentation process that enhances its beneficial bacteria.
Fermented rice is rich in microflora, which acts as a probiotic, this makes it a potent cure for gut infections, better immunity, good digestion, glossy skin and hair. Very beneficial for growing children, boosting weigh gain in children and benefits pregnant women, diabetics and those with high blood pressure.
In traditional Andhra cuisine, the rice, yogurt (curd), and water are mixed and soaked overnight. In other words, the rice is fermented with yogurt and hence rested for good bacteria to grow. In addition, diced onion and green chilies are also added while soaking. Complementing with onion enhances the taste wonderfully.
It is typically consumed during summer and in hot climates. You can use any type of rice like Sona Masoori or Brown rice or millet rice for this recipe.
Notes:
- Always remember to add yogurt or buttermilk to warm milk. Adding curd/yogurt to hot milk makes it sour in taste. Sour foods are believed to increase body heat. This recipe is to cool your body.
- If making with only milk and yogurt makes it too thick and curd is believed to raise your body temperature. Make sure to add water.
- Clay pots are preferable for an earthy taste, but steel or porcelain pots are also acceptable options.
- Adding chillies is optional, you may choose to omit them.

Probiotic Rice | Fermented Rice | Chaddannam
Ingredients
- 1½ cups rice
- 1 cup hot water (not too hot)
- 1 cup hot milk (not too hot)
- ½ tsp curd or yogurt
- ½ onion cubed
- 2-3 green chillies slit, (optional)
- salt, to taste for serving
Instructions
- Firstly, in a clay pot take 1½ cups leftover rice or fresh hot rice and break lumps with your hand.
- Now add 1 cup hot water, 1 cup milk and mix well.
- When the mixture is slightly warm, add ½ tsp curd and mix well.
- Top with ½ onion, 3 slit green chillies and cover.
- Allow to ferment overnight or at least 8 hours.
- The next morning, the curd has set well. mix gently and the fermented rice is ready to serve.
- Lastly, add salt while serving chaddannam and serve with the soaked onion and green chilly. Can also be served with your favorite pickle.
Notes
- Do not make this rice with just milk as it thickens once the curd is set.
- Additionally, adding onion and chilli, makes the Chaldi Annam / Ganji Annam more flavorful.
- Finally, Chaddannam or Fermented Curd Rice Recipe also tastes great with pickles like mango pickle.
- Add salt while serving. Salt is optional, you may choose to omit salt.
- Using clay pots are considered healthier than other. But you may use other pots as well.
