- 1½ cups rice
- 1 cup hot water (not too hot)
- 1 cup hot milk (not too hot)
- ½ tsp curd or yogurt
- ½ onion cubed
- 2-3 green chillies slit, (optional)
- salt, to taste for serving
Firstly, in a clay pot take 1½ cups leftover rice or fresh hot rice and break lumps with your hand.
Now add 1 cup hot water, 1 cup milk and mix well.
When the mixture is slightly warm, add ½ tsp curd and mix well.
Top with ½ onion, 3 slit green chillies and cover.
Allow to ferment overnight or at least 8 hours.
The next morning, the curd has set well. mix gently and the fermented rice is ready to serve.
Lastly, add salt while serving chaddannam and serve with the soaked onion and green chilly. Can also be served with your favorite pickle.
- Do not make this rice with just milk as it thickens once the curd is set.
- Additionally, adding onion and chilli, makes the Chaldi Annam / Ganji Annam more flavorful.
- Finally, Chaddannam or Fermented Curd Rice Recipe also tastes great with pickles like mango pickle.
- Add salt while serving. Salt is optional, you may choose to omit salt.
- Using clay pots are considered healthier than other. But you may use other pots as well.
