Peas Paneer Fried Rice

Peas/Matar Paneer Broccoli Fried Rice with step by step photo and video recipe. An easy and simple protein-packed stir fried rice dish, made with paneer cubes and veggies. This recipe can also be made with leftover rice.

It makes a great comforting meal or lunchbox option. Many simple and quick rice recipes are quite common these days. One such desi version of stir fried rice recipe is paneer fried rice recipe where paneer is added as the protein source. You can make many variations to this rice.

Just serve it with papad is enough for a complete meal. 

My kids love paneer. So I’m always making paneer almost every week and switching up between the different paneer recipes and serving them with roti/paratha or rice. 

Few variations

Paneer / Tofu: Paneer is used in this recipe but you can always replace paneer with tofu for more protein and less fat content. Vegans can replace paneer with tofu.

Paneer/tofu can be marinated and sautéed before hand and add it at the end.

Broccoli: Broccoli could be replaced by any other vegetable like carrot or beans if broccoli is not available.

Peas: Fresh or frozen peas can be used.

Oil/Ghee: You could use a combination of oil and ghee or purely any one thing, it’s your wish.

Peas Paneer Fried Rice

Ingredients

  • 4 tbsp oil (may add 1-2 tbsp ghee)
  • 1 tsp cumin seeds
  • 1 md onion sliced
  • 1 tsp ginger paste
  • ½ cup capsicum cubed
  • 5 green chillies slit
  • 1 tomato chopped
  • ½ tsp red chilly powder
  • ½ tsp garam masala
  • ½ tsp coriander powder
  • ½ tsp cumin powder
  • 2 tsp salt or to taste
  • ½ cup green peas
  • ¼ cup water
  • 1 cup paneer cubed
  • 2 cups basmati rice cook, spread and cooled
  • 1 cup broccoli florets

Instructions

  • Heat a pan with oil/ghee. Add cumin seeds.
  • When the cumin crackled, add sliced onions. Cover and Sauté them for 2-3 mins.
  • Add capsicum and slit green chillies. Sauté them for 2 mins.
  • Add chopped tomato and mix well. Sauté for 2 mins.
  • Add spices and peas, mix well.
  • Add little water and cook until the oil floats on top. Stir occasionally.
  • Add broccoli, cilantro and paneer cubes. Mix and cook for 2 mins to infuse the flavors into paneer.
  • Add cooked and cooled or leftover rice to the pan and mix gently to combine everything. Cook on low flame for 2-3 minutes.
  • Peas paneer fried rice recipe tastes great when served hot.

Notes

  1. To make it vegan, use tofu instead of paneer. 
  2. You may replace oil with ghee or use combination.
  3. If you prefer crispy paneer, marinate paneer and pan fry the paneer separately and mix with rice in the end. 
  4. If you are using freshly cooked rice, make sure to cool the rice completely before adding.
  5. If broccoli is not available, skip adding it.
