Equipment

Ingredients

  • 3 ripe mango peeled and chopped (keep 1 mango slices for topping)
  • ½ cup Greek yogurt, divided
  • 1–2 tsp sugar or honey (optional, adjust based on mango sweetness)
  • 1 tbsp chia seeds
  • 2–3 tbsp granola or crumbled breakfast bar
  • ½ cup mixed nuts lightly roasted and chopped
  • 2 tbsp hemp seeds or finely chopped nuts (for topping)

Instructions

  • In a small bowl, mix 1 tablespoon of chia seeds with 3 tablespoons of water. Let it sit for 10–15 minutes until it forms a gel-like texture.

Blend the mango smoothie base

  • In a blender, combine the chopped mango (of 2 mangos) with about 2-3 tbsp greek yogurt or hung curds. Add sugar or honey if needed. Blend until smooth and creamy.

Prepare other layers

  • Loosen the remaining Greek yogurt with a spoon (or add a teaspoon of milk or water if needed for easier layering).
  • Lightly roast and chop the nuts.
  • Have your soaked chia, granola, and mango slices ready.

Assemble the parfait

  • In a glass, bowl or jar, layer as follows:
    A few spoonfuls of the mango smoothie
    A spoonful of loosened Greek yogurt
    A layer of soaked chia seeds
    A sprinkle of roasted chopped nuts
    More mango smoothie
    A spoonful of granola
    Another layer of mango smoothie
    Top with fresh mango slices
  • Sprinkle the top with finely chopped nuts or hemp seeds or cantaloupe / watermelon seeds for a crunchy, nutritious finish.
    Optional: Add a little extra granola on top for crunch, if you like.
  • Serve immediately or chill for a few minutes. Enjoy!

Notes

  1. For variation, include fresh fruits between the layers to add color, texture, and natural sweetness for variety and extra flavor. 
  2. You can use almonds, cashews, pecans, walnuts, pistachios, pumpkin seeds, sunflower seeds or any nuts and seeds of your choice.
  3. If you don't have granola, you may just crumble the breakfast bar and use as granola.   
  4. Feel free to layer the ingredients in any order—get creative and make it your own
  5. Refrigerate any leftover chopped nuts to use later in your favorite recipes!
