Ingredients

  • 4 cups Jowar puffs
  • 1 tsp kashmiri red chilly powder
  • ½-1 tsp salt (adjust to taste)
  • ½ tsp turmeric
  • ½ tsp black pepper powder
  • ½ tsp dry mango powder
  • ½ tsp cumin/jeera powder
  • 3 tsp ghee

Instructions

  • Mix all the spices in a cup and keep aside.
  • Heat 2 tsp ghee in a wide pan. Add the jowar puffs and fry on low–medium heat for 3–4 minutes, stirring often, until they turn crisp.
  • tip : “Crunch test: it should crumble to powder between your fingers.”
  • Reduce heat to low (or switch off). Add 2-3 tsp spice powder(from step 1) and sprinkle the remaining 1 tsp ghee.
  • Turn off the heat and toss quickly so all the puffs are coated evenly without burning the masalas.
  • Spread the masala puffs on a plate, let them cool completely, and then transfer to an air-tight container. Stays fresh for up to 2-3 weeks.

Notes

  • Add crushed garlic or curry leaves to the ghee for extra flavor.
  • For a vegan version, replace ghee with coconut oil or peanut oil.
  • Adjust spice levels to suit kids.
  • Add roasted peanuts or chana dal for a mixed snack.
