Ingredients

Mango Salsa

  • 1 big raw mango finely chopped
  • ¼ cup onion finely chopped
  • ¼ cup cilantro choped
  • ½ tsp red chily powder
  • ¾-1 tsp salt adjust to taste
  • 1 tbsp lime juice
  • ½ tsp pepper
  • 2 tbsp green chutney

Guacamolé

  • 5-6 avocados
  • salt to taste
  • Lemon juice (to prevent browning and add freshness)
  • ¼ tsp pepper optional

Toppings for Layering

  • 2 cups cherry tomatoes halved
  • spinach cut into strips
  • 1 tbsp honey optional
  • cheese grated
  • hemp seeds or toasted sesame seeds optional
  • extra virgin olive oil
  • Crushed chilli flakes

Bread

  • Panini bread or artisan bread or italian bread or any crusty bread or rye bread or sour dough hard variety
  • oil (for toasting)

Instructions

  • Mix all the salsa ingredients to make salsa. Set it aside.
  • Mash avocado, mix salt and lime juice. Set it aside.
  • Lightly apply the oil on the bread and toast on a pan until golden and crisp.
  • Spread a generous layer of (Guacamolé) mashed avocado.
  • Add a big spoonful of raw mango salsa, spread it evenly.
  • Add a layer of chopped cherry tomatoes.
  • Drizzle a little olive oil.
  • Sprinkle crushed chilli flakes and hemp seeds.
  • Top with spinach and grated cheese.
  • Serve immediately while warm and fresh and enjoy this avocado toast as is, or pair it with your favorite side dish like quinoa salad, roasted vegetables, baked sweet potato, fresh fruit, juice, or a smoothie for a more filling meal.

Notes

  1. You can use any sturdy or hard bread like sourdough, multigrain, or artisan loaf — it holds the toppings better.
  2. For better flavor and freshness, grate your own cheese from a cheese block instead of using pre-shredded cheese. It tastes better and richer.
  3. If you prefer a slightly sweeter balance, drizzle a little honey on top before serving. It pairs beautifully with the tangy mango and creamy avocado.
  4. Drizzling olive oil is optional, but it adds extra richness and flavor.
  5. Hemp seeds can be replaced with roasted or toasted sesame seeds for a nutty crunch.
  6. Spinach can be swapped with any leafy greens like arugula, mixed greens, baby kale, or lettuce.
  7. Adjust lemon and honey in the salsa depending on how tangy your raw mango is.
  8. For extra spice, increase red chilly powder or crushed chilli flakes.
