- 4 tbsp oil (may add 1-2 tbsp ghee)
- 1 tsp cumin seeds
- 1 md onion sliced
- 1 tsp ginger paste
- ½ cup capsicum cubed
- 5 green chillies slit
- 1 tomato chopped
- ½ tsp red chilly powder
- ½ tsp garam masala
- ½ tsp coriander powder
- ½ tsp cumin powder
- 2 tsp salt or to taste
- ½ cup green peas
- ¼ cup water
- 1 cup paneer cubed
- 2 cups basmati rice cook, spread and cooled
- 1 cup broccoli florets
Heat a pan with oil/ghee. Add cumin seeds.
When the cumin crackled, add sliced onions. Cover and Sauté them for 2-3 mins.
Add capsicum and slit green chillies. Sauté them for 2 mins.
Add chopped tomato and mix well. Sauté for 2 mins.
Add spices and peas, mix well.
Add little water and cook until the oil floats on top. Stir occasionally.
Add broccoli, cilantro and paneer cubes. Mix and cook for 2 mins to infuse the flavors into paneer.
Add cooked and cooled or leftover rice to the pan and mix gently to combine everything. Cook on low flame for 2-3 minutes.
Peas paneer fried rice recipe tastes great when served hot.
- To make it vegan, use tofu instead of paneer.
- You may replace oil with ghee or use combination.
- If you prefer crispy paneer, marinate paneer and pan fry the paneer separately and mix with rice in the end.
- If you are using freshly cooked rice, make sure to cool the rice completely before adding.
- If broccoli is not available, skip adding it.
