Greek Yogurt Bark

Greek Yogurt Bark – It’s so easy to whip up, healthy and packed with protein. Lightly sweetened frozen yogurt bark studded with colorful berries, chocolate chunks and nuts is the perfect refreshing snack that kids as well as adults can enjoy any time. This is also perfect and easy snack for hot summers. This can be made in just 5 mins and freeze up to 3-4 hrs. My daughter made this yummy bark to satisfy her sweet and ice cream cravings in a healthy way. She wants a batch of this delightful snack in the freezer all the time.

Plain Greek Yogurt – Use full-fat yogurt to ensure the thickest and creamiest bark possible. You may also use low-fat yogurt to cut back on fat. But full-fat yogurt yields the rich, creamy bark. If greek yogurt is not available, you can go for hung curds.

Vegans can use Dairy-free yogurt.

Honey or Maple syrup or Agave nectar – The bark tastes good with any of these sweeteners. If using Agave nectar, use a little less as it is 3 times sweeter than honey.

  • vanilla – regular vanilla extract for flavor.
  • strawberries and raspberries – you can use any fresh berries like black berries and blueberries too.
  • Nuts – You may use any variety of dry fruits/nuts or seeds like hemp seeds, walnuts, pecans, pistachios, sunflower seeds, pumpkin seeds, raisins, craisins etc.,
  • Chocolate syrup – this is one way of your customization.. it’s not necessary but you may use your imagination to enjoy your own way!!!

Storing Yogurt Bark

I recommend storing frozen yogurt bark in an airtight container in the freezer until you’re ready to serve! You may enjoy immediately out of the freezer. But I like bringing it out of the freezer a few minutes before serving, just to let it soften up the tiniest bit.

The yogurt bark will keep up to 3 months in the freezer, but I bet it’ll be gone in less than a week.

How to make Greek Yogurt Bark

Ingredients

  • full fat greek yogurt – 1 cup
  • honey – 1-2 tbsp (adjust to your taste)
  • lemon juice – 1/8 tsp
  • vanilla extract – 1/4 tsp
  • berries
  • nuts, dry fruits
  • chocolate chunks – 1 tbsp (optional)
  • chocolate syrup (optional)

Instructions

  1. Line a rimmed baking sheet with a parchment paper.
  2. Stir yogurt, honey, lemon juice and vanilla in a medium bowl.
  3. Spread on the prepared baking sheet.
  4. Scatter the strawberries, raspberries, nuts on top and sprinkle with chocolate chips.
  5. Freeze until very firm, at least 3 hours. To serve, cut or break into 12 pieces.

Tips

  1. Can freeze in an airtight container between parchment sheets to last up to 1 month.
  2. Let stand at room temperature for 15 minutes before serving.
