Watermelon Juice

Hot summers just scream for cool, refreshing fruity sips, so we are making a healthy version at home! Watermelon, this red juicy fruit is low in calories, but rich in nutrients and refreshing to keep you hydrated. Watermelon is also high in vitamin A, vitamin B and C, potassium and full of antioxidants and anti-inflammatory properties. It’s about 92% water, so it’s plenty of hydration.

The natural sweetness from the watermelon in this juice recipe should be sufficient but this juice may need a little bit more sweetness since we are adding mint leaves, pepper, ginger powder and lemon juice, feel free to add a tablespoon of honey. I added mint leaves for that extra punch! If your watermelon had seeds in it, or if you want your juice to be less pulpy, pour it through a fine-mesh sieve into a pitcher. If your juice separates as it sits, give it a little whirl with a spoon.

Watermelon Tip: Try to find one that is heavy for its size and has a big yellow spot at where it sits on the ground.

How to make Watermelon juice

Ingredients

  • watermelon cubes – 1.5 cups
  • mint leaves – 5
  • lemon juice – 1 tbsp
  • pepper – pinch
  • dry ginger/sonti powder – pinch
  • honey – 1 tbsp
  • sugar – 1 tsp (optional)
  • ice cubes – 1/2 cup
  • water – 1 cup

Instructions

  1. Chop the watermelon into chunks removing the rind and seeds. Place the chunks into a bowl and let them cool in refrigerator for 1-2 hours.
  2. In a blender, add watermelon cubes, mint leaves, lemon juice, pepper, dry ginger powder, honey, sugar and water.
  3. Blend until it is totally pulverized. This shouldn’t take more than a minute.
  4. If your watermelon is notably pulpy or seeded, pour the mixture through a fine mesh strainer into a pitcher. If not, you can pour it directly into glasses filled with ice.
  5. The juice will separate as it sits, stir it with a spoon.

Tips

  1. If you don’t have ginger powder, you can skip it. Juice tastes good even without ginger powder.
