Enchiladas

An enchilada is a corn or flour tortilla rolled around a filling and covered with a savory sauce. Enchiladas can be filled with a variety of ingredients, including various cheese, beans, potatoes, roasted vegetables or combinations of your choice. Also posting recipes for home made tortillas and sauce for your convenience.

This is a veggie enchilada using refried beans with veggies as stuffing and topped with cheese and enchilada sauce.

How to make Enchiladas

Ingredients

  • flour tortillas – 10
  • mexican cheese – 1.5 cups
  • enchilada sauce – 2 cans
  • red chilli powder – 1 tsp (optional)
  • water – 1/2 cup

Instructions

  1. Cook the refried beans. instructions on how to cook refried beans.. refried beans/one pot refried .
  2. Open and pour the enchilada sauce cans into a bowl. Add red chilli powder and water.
  3. Mix the ingredients in the bowl well and warm the sauce.
  4. Heat a pan to warm tortillas. After the pan is hot, place a tortilla and apply a little oil. Flip it to other side. Heat the tortilla both sides for just 3 or 4 sec. It should be soft. Stack all the tortillas on top of each other in a plate to keep them soft.
  5. Preheat the oven to 375 degree F.
  6. Take a oven safe baking dish, spray with non stick oil spray or apply a little oil.
  7. Pour the enchilada sauce from the bowl into the baking dish and spread it evenly.
  8. Roll the tortillas with beans and place the rolled tortilla seam side down in the baking dish. Repeat this for the rest of the tortillas
  9. Pour the remaining sauce on top of the rolled tortillas in the baking dish.
  10. Add cheese, then olives over the rolled tortillas.
  11. Cover the baking dish with aluminum foil. Place the covered baking dish in the top rack of the oven.
  12. Bake the enchiladas for 37-40 minutes, or until bubbly.

Enchilada – step by step photo instructions

  1. Cook and keep refried beans/one pot refried beans ready. Open and pour 2 cans of enchilada sauce into a bowl and add 1 tsp red chilli powder. Mix well and warm the sauce.

Home made Enchilada Sauce: Add 3 tbsp oil and 3 tbsp all-purpose flour to a pan and heat it. Roast until flour is light golden brown. Add 1 cup tomato puree, 1/2 tsp garlic paste, 1 tsp oregano, salt, 1 tsp sugar, 1/4 tsp black pepper, 1.5 tsp red chili powder, and 1 tsp cumin powder(must in Mexican recipes), 2 cups water and a pinch cinnamon. Mix it well, make sure there is no lumps. Boil over medium heat about 2-3 minutes, keep stirring. sauce should be pouring consistency.

2. warm the tortillas using a pan. After the pan is hot, place a tortilla and apply a little oil. Flip it to other side. Heat the tortilla both sides for just 3 or 4 sec. It should be soft. Stack all the tortillas on top of each other in a plate to keep them soft.

Note: These are 10″ flour tortillas, you may use 6″ flour or corn tortillas as well.

Home made tortillas: Make a dough using 2 cups maida/all-purpose flour, 1/2 tsp salt, 2-3 tbsp oil and water. Press like roti, cook on a heated pan.

3. Preheat the oven to 375 degree F. Take a oven safe baking dish/pan, spray with non stick oil spray or apply a little oil. Pour enchilada sauce as the base in the baking dish.

5. Roll the tortillas with beans and Place the tortilla seam side down in the baking dish. Repeat this with the rest of the tortillas. Pour the remaining sauce on top of the rolled tortillas.

6. End with a generous sprinkling of cheese, then spread a few olives(optional). Then cover the dish with aluminium foil.

7. Place the dish in the oven and bake the enchiladas for 37-40 minutes, or until bubbly. If you don’t have an oven, you can place rolled tortilla on a plate, pour sauce over, sprinkle cheese and microwave for 1 min.

8. Serve hot.

Tips and variations

  1. If you don’t have an oven, you can place rolled tortilla on a plate, pour sauce over, sprinkle cheese and microwave for 1 min.
  2. Mexican rice can be served as a side.
  3. Could Garnish with cilantro, black olives, green onion, jalapenos and avocado on top of the cheese.
  4. Oven temperatures can be adjusted depending on the oven you use.
  5. Use a small dish and 6″ tortillas if using an air fryer.
  6. You may use roasted veggies or Mexican rice or cheese with sauteed spinach and corn instead of beans.
  7. In order to cut back on time as well as work, you may also use canned refried beans.
  8. If you don’t have an oven, you can place rolled tortilla on a plate, pour sauce over, sprinkle cheese and microwave for 1 min.
