Smoked Eggplant Raita

How to make Smoked Eggplant Raita

Ingredients

  • Big egg plant – 1
  • yogurt/curd – 2 cups
  • green chilli – 1, chopped (optional)
  • oil – 1 tbsp
  • mustard seeds – 1/4 tsp
  • cumin seeds – 1 tsp
  • urad dal – 1 tsp
  • curry leaves
  • hing – pinch

Instructions

  1. Take eggplant, wash, wipe it and apply some oil all around. Then roast it on open flame directly. keep flipping and keep rotating it over till it is roasted completely on all sides.
  2. Place it in a plate, cool it down completely. Peel the skin off the eggplant.
  3. Mash the egg plant with potato masher/hand or cut it into very small pieces. Take it in a bowl, add salt, chopped green chilli and yogurt. Mix it thoroughly.
  4. Season it with heating 1 tbsp oil, add 1/4 tsp mustard seeds, 1 tsp urad dal, 1 tsp cumin seeds, curry leaves and pinch of hing.
  5. Serve raita as a side with rice, roti and chapathi or as a dip to snacks and veggies.

Tips

  1. Can skip using green chillies. This raita tastes good even without green chillies.
  2. Can use any kind of egg plants even the small round green ones.
  3. If you don’t like the smoky flavor, you can use the oven to roast the eggplant instead of on direct flame.
  4. Raita can be served chilled.
